Tiramisu Cookies

Cookies inspired by tiramisu, filled with mascarpone coffee cream and drizzled with chocolate sauce.

Tiramisu Cookies

Ingredients

butter (cubed) 50 g
fine sugar (extra-fine) 90 g
egg (beaten) 1
all-purpose flour 50 g
mascarpone cheese (for filling) 150 g
rum (for filling) 1 tbsp
instant coffee (for filling) 1/2 tsp
mascavino sugar (light, for filling) 1 tbsp
white chocolate (for decoration) 75 g
milk (for decoration) 1 tbsp
chocolate chips (for decoration) 2 tbsp

Instructions

Prepare the filling

Place the mascarpone cheese in a bowl. Dissolve the instant coffee in the rum and add to the mascarpone along with the sugar. Mix thoroughly. Cover with plastic wrap and refrigerate.

Prepare for baking

Preheat the oven to 200°C (gas mark 7). Line 2 or 3 baking sheets with parchment paper.

Make the cookie dough

Cream the butter and sugar in a bowl. Add the egg and mix thoroughly. Add the flour and beat again.

Pipe and bake

Transfer the dough to a piping bag fitted with a plain tip. Pipe 28 small mounds onto the baking sheets, leaving some space between them. Bake for 6 to 8 minutes, until the centers of the cookies begin to firm up and the edges turn golden. Remove from the oven and let cool.

Assemble

Spread a layer of filling on half the cookies and top with the other half to form sandwich cookies.

Decorate

Place the chocolate and milk in a heatproof bowl and melt over a double boiler. Once the chocolate is melted, stir vigorously until smooth. Drizzle the chocolate sauce evenly over the cookies. Sprinkle with chocolate chips.
