clear chicken broth 1/4 cup
light soy sauce 1 tablespoon
Shaoxing wine 1 teaspoon
sesame oil 1 teaspoon
sugar 1 teaspoon
starch 2 teaspoons
black pepper powder a pinch
oil 2 tablespoons
Beef (minced (presumed)) to taste
Tomato (washed, each cut into 8 pieces following a rice-character shape) to taste
Onion to taste
Starch water to taste
Salt (for seasoning) to taste
Chopped scallion to taste

Instructions

Marinate the beef

Place the beef in a 1-liter glass measuring cup, first mix in chicken stock thoroughly, then add the remaining seasonings, and finally add oil; let it marinate for 15 minutes.

Prepare the tomatoes

Wash the tomatoes, cut each into 8 pieces in a crisscross (米-shaped) pattern.

Cook the vegetables

Add oil and onion to a 2-liter shallow pot, heat on high for 2 minutes. Add the tomato pieces, cover the pot, and heat on high for 5 minutes until the tomatoes soften.

Combine the beef

Use a spoon to transfer about half a cup of the hot cooked tomato mixture into the measuring cup with the beef, stir to separate the beef pieces with chopsticks, then pour the beef mixture back into the pot with the tomatoes and mix thoroughly. Cover the pot and heat on high for 2 minutes.

Thicken and season

Prepare the cornstarch slurry, add it to the meat sauce, then add sugar and salt to taste, mix well, cover the pot, and heat on high for 1 minute. After tasting to adjust seasoning if desired, sprinkle with chopped scallion, and serve directly from the cooking pot.
