Tomato Pork Slices
Nothing beats thick, rich tomato sauce paired with generous slices of meat.

Step 1
Prepare all ingredients.
Step 2
Wash the poplar mushrooms, tear them into small pieces, peel and dice the tomatoes, slice the ginger and garlic, and cut the scallions into segments.
Step 3
Bring water to a boil, add the poplar mushrooms and cook for 1 to 2 minutes until tender. Note: You can substitute with king oyster mushrooms or enoki mushrooms.
Step 4
Scoop into a serving bowl to use as the base.
Step 5
Add a small amount of oil to the pot, pour in 500g of water, and add 100g of tomato hot pot base.
Step 6
Add the sliced scallions, ginger, garlic, and half of the diced tomatoes. Bring to a boil over high heat, then reduce to low heat.

Prepare the lean pork: first slice it into pieces.
Step 8
Sprinkle with sweet potato starch, place the pork slices on the starch, and pound them firmly with a rolling pin until each slice doubles in size.

Pork slices that have doubled in size after pounding.

Turn the heat to high, and add the pork slices to the pot one by one.
Step 11
After adding all the slices, stir gently with chopsticks. If there is not enough water, add water as needed.

Once all the pork slices have changed color, pour in the remaining half of the diced tomatoes and cook for half a minute.

Transfer to a bowl, sprinkle with chopped scallions and sesame seeds.

Heat a spoonful of oil until hot, then drizzle it over the scallions.

The tomato pork slices are ready.
