vegetable oil 2 tablespoons
scallions 3 stalks, chopped
ripe tomatoes 4 medium, diced
hot water 4 cups
tomato paste 2 tablespoons
salt 1 teaspoon
sugar 1 teaspoon
oyster sauce 1 tablespoon
white pepper 1/2 teaspoon

Heat the oil

Pour the vegetable oil into a large pot over medium heat. Let it warm up for about 30 seconds until shimmering.

Bloom the aromatics

Add the chopped scallions to the hot oil. Stir continuously for about 1 minute until they become fragrant and slightly softened. Be careful not to let them burn.

Cook the tomatoes

Add the diced tomatoes to the pot. Stir and cook for 3-4 minutes, breaking them down slightly with your spoon. The tomatoes should soften and release their juices.
