Instructions
Step 1
First, take 60g of unsalted butter that has been fully softened at room temperature and 35g of granulated sugar. Use an electric mixer to beat until the color lightens and the volume slightly increases.
Step 2
Add 1 room-temperature egg yolk and continue beating with an electric mixer until well combined.
Step 3
Add 20g of room-temperature milk (taken out of the fridge in advance to come to room temperature) in two batches, beating well with an electric mixer after each addition before adding more milk.
Step 4
Sift in 40g of cake flour and add 80g of desiccated coconut.
Step 5
Mix with a spatula until combined, then knead into a dough.
Step 6
Take half of the dough, sift in 2g of matcha powder, and knead by hand until evenly combined.
Step 7
Divide into small balls of about 5g to 10g each, and roll each evenly in a layer of desiccated coconut, then set aside.
Step 8
Preheat the oven to 170°C in advance and bake for about 12-16 minutes. Oven temperatures vary by household, so bake until the tops of the balls are just slightly colored.
