Vegetarian Ham

A traditional vegetarian Lu cuisine dish, this vegetarian ham is made primarily with steamed yam, featuring alternating red and white layers that closely mimic the color and form of real ham.

Vegetarian Ham

Ingredients

Yam, peeled, steamed in a steamer until cooked, mashed into paste 400 g
Egg white 50 g
Ground amomum 25 g
Jianqu juice 20 g
Light caramel color 15 g
Refined salt 4 g
Sesame oil 4 g
Monosodium glutamate (MSG) 1 g
White sugar 20 g

Instructions

Make Yam Paste

Peel the yam, steam in a steamer until fully cooked, then mash into a paste. Place the yam paste in a dish with wet starch, add egg white, refined salt, sesame oil, MSG, and white sugar, stir thoroughly to form the yam mixture.

Make the "Skin"

Take 1/10 of the yam mixture, add light caramel color, and mix evenly. Transfer to an oiled metal container, spread into an even layer, steam in a steamer until firm, then remove to form the "skin".

Make the "Fat Layer"

Place 3/10 of the yam mixture on top of the skin, spread into an even layer, steam for 10 minutes, then remove from the steamer to form the "fat layer".

Make the "Meat Layer"

Add the ground amomum and Jianqu juice to the remaining yam mixture, stir well with sesame oil, spread the mixture over the "fat layer", then steam in a steamer for 35 minutes.

Slice and Serve

Let cool completely, brush with sesame oil, slice, and serve.
