Vegetarian Stir-fried Tofu

Vegetarian Stir-fried Tofu

Ingredients

firm tofu to taste
fresh shiitake mushrooms to taste
carrot to taste
garlic half

Instructions

Step 1

Dice the fresh shiitake mushrooms and carrot. Wrap two pieces of firm tofu in kitchen paper, let rest for 10 minutes, then drain excess water. Boil the carrot in hot water until soft.

Cut the drained tofu into small cubes, place in a wide shallow plate, and coat with flour. Shake the plate gently a few times, like sifting rice.

Shake until the flour coats the tofu evenly.

Heat oil over high heat, add the garlic cloves and fry until fragrant. Turn off the heat, set aside half the garlic oil as base oil, and scoop out the extra garlic oil and fried garlic cloves for later use.

Pan-fry the tofu.

Fry until all sides of the tofu are golden brown, then sprinkle with a small pinch of salt. Set aside for later use.

Pour in the remaining garlic oil, then stir-fry the fresh shiitake mushrooms and boiled soft carrot.

Add sugar, cooking wine, 1 tbsp oyster sauce, 1 tbsp scallop sauce, and 2 tbsp of the boiled carrot water, then stir-fry to combine evenly.

Add the fried tofu and fried garlic cloves, continue stir-frying, then turn up the heat to reduce the sauce.

Turn off the heat once the sauce has reduced to your desired consistency.

Sprinkle with cilantro.
