Red Bean Porridge
A porridge with benefits including detoxifying and expelling pus, promoting urination to reduce swelling, clearing heat and removing dampness, strengthening the spleen, and stopping diarrhea.

red small beans (remove skin and debris, wash clean)
1000 g
brown sugar
600 g
osmanthus sugar
50 g
starch (mixed with cold water)
200 g
clear water
5000 g
alkali
to taste

Cook the Beans
Remove the skin and debris from the red small beans and wash them clean. Place 5000 g of clear water in a pot, add the red small beans and alkali. First bring to a boil over high heat, then reduce to low heat and simmer until soft and tender. Stir in the brown sugar until evenly combined.

Thicken the Porridge
Mix the starch with cold water to make a slurry. Once the red bean porridge is fully cooked, pour in the starch slurry to thicken, giving the porridge a viscous texture. Finally, add the osmanthus sugar, stir well, and serve.
