Classic Belgian Brussels-style waffles made with yeast-fermented batter, featuring a crisp exterior and soft, fluffy interior.

Milk (heated to 37°C)
200ml
Instant dry yeast

Cake flour (sifted)

Eggs
2 (~100g)
Granulated sugar

Salt

Vanilla oil
2–3 drops
Butter (melted over a double boiler)

Mix the batter
Heat the milk to 37°C, add the yeast, and mix briefly. Sift the cake flour, then add the egg, granulated sugar, salt, and vanilla oil, and mix. Pour the milk into the dry ingredients and mix, then add the melted butter and stir until combined.

Proof
Seal the batter with plastic wrap and let it rise in a place around 35°C for 1 hour, until bubbles appear on the surface.

Cook
Heat the waffle iron and coat it generously with butter. Pour in about 70ml of batter, close the iron, and cook each side over medium heat for 2–3 minutes.
