Prepare the Ingredients
Soften the butter at room temperature, and sift the cake flour through a fine sieve. Cut the walnuts into large chunks and set aside.
Make the Dough
Beat the butter until it becomes a pale, paste-like cream. Add the granulated sugar in 2–3 batches, mixing thoroughly after each addition. Pour in the vanilla extract and mix to combine. Add the walnuts and stir, then add the cake flour and use a spatula to bring the mixture together evenly. While the mixture is still a bit powdery, drizzle in the water and gather everything into one large ball of dough.
Chill the Dough
Lay out a sheet of plastic wrap on the counter, place the dough on top, and wrap it up. Roll the dough with your hands while gently stretching it. Once it forms a cylinder about 3 cm in diameter, place it (still wrapped) in the refrigerator to chill for 1 hour.
Slice and Bake
Preheat the oven to 170 °C. Unwrap the dough and use a knife to cut it into rounds about 1 cm thick. If any portion becomes too soft to slice cleanly, return it to the refrigerator to firm up. Line a baking sheet with a silicone baking mat, space the cookie rounds 3–4 cm apart, and bake in the 170 °C oven for 15–20 minutes.
