Walnut Raisin Finger Biscuits

Walnut Raisin Finger Biscuits

Ingredients

unsalted butter (softened) 50 g
eggs 3
cake flour 150 g
baking powder ½ tsp
walnut powder 50 g
cornmeal 50 g
raisins 150 g
walnuts (chopped) 75 g

Make the dough

Preheat oven to 175°C (350°F / Gas mark 4). Grease and flour a baking sheet. Beat butter and eggs until well combined. Add flour, baking powder, walnut powder, and cornmeal, stirring. Then add raisins and chopped walnuts, kneading into a smooth batter.

First bake

Divide the dough into two portions, shape each into a flat loaf about 25 cm long and 5 cm wide on a baking sheet. Bake for 20 minutes until light golden and dry.

Second bake

Remove to a cutting board, cut into 0.5-1 cm thick slices with a serrated knife. Arrange slices on baking sheet and bake for 10-15 minutes, then flip and bake another 10-15 minutes until golden brown. Remove and let cool.

Storage

Store in an airtight container to keep for several weeks.
