Prep Ingredients and Make Dipping Sauce
Finely mince the pork, dice the shiitake mushrooms and winter bamboo shoots into small cubes, cook the eggs into thin crepes, cut the green bamboo shoots into rolling chunks, wash the daylily buds and wood ear mushrooms, chop the pickled chili peppers and green onions, mince a portion of the Sichuan peppercorns, and mix the spicy chili sauce with sugar and minced garlic to make a dipping sauce.
Make the Meat Roll
Combine the minced pork with the diced shiitake mushrooms, winter bamboo shoots, egg, bean starch, water, Sichuan peppercorn powder, and salt to form a filling. Wrap the filling in the egg crepe to form a long roll, steam until fully cooked, then cool and slice into pieces.
Arrange the Bowl
Place the green bamboo shoot chunks, daylily buds, wood ear mushrooms, and sweet potato vermicelli into a large bowl, then arrange the sliced meat roll on top.
Steam to Finish
Heat a small amount of oil in a pan, add the Sichuan peppercorns, ginger, and green onions to bloom, then pour in water and bring to a boil. Pour the hot broth over the bowl, steam until thoroughly heated, sprinkle with chopped green onions and pickled chili pepper bits, and serve with the spicy dipping sauce.
