White Chocolate Truffle Balls

White chocolate truffles with a distinctive mellow richness, dusted with cocoa powder for serving.

White Chocolate Truffle Balls

Ingredients

white chocolate (chopped) 280 g
unsalted butter (diced) 75 g
sweet cream 3 tbsp
salt 1 pinch
orange liqueur 1/2 tsp
sifted cocoa powder (for coating) 2 tbsp

Instructions

Step 1

Melt the chocolate, butter, cream, and salt together (see page 30), then remove from heat and let cool. Once the mixture has cooled, stir in the liqueur. Cover and refrigerate until firm and set, approximately 2 hours.

Step 2

Pinch off marble-sized pieces of the chilled mixture, then roll into small balls in your palms. If the mixture is too hard to shape, return it to the refrigerator to chill for a longer time.

Pour the sifted cocoa powder onto a sheet of parchment paper, add the truffle balls, and toss to coat evenly.
