Instructions
Marinating
Arrange the fish slices on a plate without overlapping. Sprinkle with salt and drizzle white wine back and forth over the entire surface of the fish.
Heating
Leave the fish as is for a short time to allow the flavors to penetrate, then cover with a lid and heat in the microwave for 5 minutes. If the color of the fish has not yet fully turned pale (i.e., it is not completely cooked), continue heating.
Making the mayonnaise
Add the salt, pepper, and mustard to the egg yolk and whisk vigorously until combined. Then add the salad oil a little at a time, stirring constantly until smooth. Add the vinegar a little at a time to the smooth yolk mixture and mix again. Finally, add the sugar and mix until glossy.
Plating
Once the fish slices are heated through and fully cooked, remove the skin with chopsticks and let them cool completely. Drizzle with an appropriate amount of mayonnaise, top with walnuts, and serve with vegetable leaves to make a delicious main dish.
