Winter Melon with Ham
Steam thin slices of ham tucked between winter melon slices, then pour over seasoned broth. The dish is savory and fresh-tasting, with soft, tender ham.

Prepare the winter melon
Peel the winter melon and remove the seeds. Cut it into long butterfly-shaped strips, then slice into 24 "double-flying" pieces. Blanch in a pot of boiling water, then transfer to a bowl of cold water to cool.
Steam
Cut the lean ham into 24 rectangular thin slices and sandwich one between each piece of winter melon. Arrange neatly in a large steaming bowl, add 2 tsp fine salt, 2 tsp MSG, and the superior broth. Steam over medium heat until the winter melon is tender and soft. Remove, pour off the original broth, and invert the contents into a soup bowl.
Pour the broth
Combine the superior broth with the reserved original broth in a wok, add 1 tsp fine salt and 1 tsp MSG, and bring to a boil over high heat. Pour the boiling broth along the edge of the bowl to serve.
