Yangzhou Assorted Egg Fried Rice
This classic Yangzhou assorted egg fried rice is stir-fried with a mix of ingredients including shrimp, ham, sausage, and shiitake mushrooms.

Cooked rice (recommended overnight dry loose rice)

Stir-fry the ingredients
Heat oil in a wok to about 40% hot, add the shrimp, diced ham, diced sausage, green peas, diced winter bamboo shoots, and diced rehydrated shiitake mushrooms. Stir-fry until cooked through, then remove and drain off excess oil; set aside.

Scramble the eggs
Clean the wok, add a suitable amount of oil, pour in the beaten egg, and scramble until about 80% cooked. Remove and set aside.

Fry the rice
Stir-fry the cooked rice to break up any clumps, add the previously cooked components, then season with salt, chicken bouillon, and white pepper to taste. Serve.
