Yellow Wine and Angelica Chicken Stew

Story

This nourishing dish combines the warmth of yellow wine with the subtle herbal notes of angelica root. It is perfect for a comforting meal that feels restorative and gentle on the stomach.

Ingredients

Whole chicken (cut into pieces) 1 (about 500g)
Yellow wine (Shaoxing wine) 400ml
Water 200ml
Angelica root (Dang Gui) 2 slices
Red dates (jujubes) 6 pieces
Goji berries (optional) 1 tbsp
Salt 1 tsp

Instructions

1

Season the Chicken

Rinse the chicken thoroughly and pat it dry. Rub the salt evenly over the meat and let it sit for 30 minutes to marinate.

2

Prepare the Herbs

Clean the angelica root and goji berries. Soak the red dates in warm water for a few minutes to soften them up.

3

Braise the Stew

Place the seasoned chicken in a clay pot or heavy-bottomed pot. Add the soaked herbs, red dates, angelica root, yellow wine, and water. Ensure the liquid covers the chicken.

4

Simmer

Cover the pot with a lid. Bring the liquid to a boil over high heat, then reduce to medium heat and cook for 25 minutes. Turn off the heat and allow the chicken to rest in the broth before serving.
