Instructions
Prepare the mold
Brush the inside of the mold evenly with butter using a pastry brush, then sprinkle fine granulated sugar evenly over it. Place the mold in the refrigerator to chill until needed.
Make the batter
Place the low-fat cheese in a bowl and blend with a hand mixer. Add the eggs in three batches, mixing thoroughly after each addition. Add the fine granulated sugar and heat over a double boiler while stirring constantly with a rubber spatula.
Make the batter (continued)
Once the sugar has fully dissolved, remove from the heat. Add the heavy cream, milk, and cherry brandy, stirring thoroughly after each addition. Strain the batter through a fine sieve.
Pour into mold and bake in a water bath
Pour the batter from step 3 into the prepared mold from step 1, filling it about 80% full. Arrange half of the cherries on top of the batter. Place the mold on a baking tray and pour hot water into the tray. Bake at 170–180°C for 20 minutes, then remove from the oven, arrange the remaining cherries on top, and bake for another 5–10 minutes.
