Ingredients

butter 2 tablespoons
walnut halves 1 cup
sugar (for walnuts) 1 tablespoon
pepper (for walnuts) 1/8 teaspoon
romaine (torn) 5 cups
red leaf lettuce (torn) 5 cups
red apple (chopped) 1 medium
green apple (chopped) 1 medium
feta cheese (crumbled) 1/2 to 1 cup
white wine vinegar 6 tablespoons
finely chopped onion 2 tablespoons
Dijon mustard 1-1/2 teaspoons
garlic cloves (minced) 2
sugar (for dressing) 1/2 teaspoon
dried oregano 1/4 teaspoon
salt 1/8 teaspoon
dried parsley flakes 1/8 teaspoon
pepper (for dressing) 1/8 teaspoon

Instructions

Make candied walnuts

In a small saucepan, melt butter over medium heat. Add walnuts; sprinkle with sugar and pepper. Stir until completely coated. Spread on a baking sheet. Bake at 350° for 15 minutes or until lightly browned, stirring every 5 minutes. Cool on a rack.

Prepare salad

Meanwhile, in a large bowl, mix romaine, red leaf lettuce, apples, and feta cheese; set aside.

Make dressing and assemble

In a blender, mix dressing ingredients; cover and blend until mixed. Drizzle over salad; toss to coat. Sprinkle with sugared walnuts.
