Cantonese-Style Cold Cake

Ingredients

glutinous rice flour 40g
wheat starch 40g
osmanthus honey to taste
raisins (washed, soaked until soft, diced) to taste
red dates (washed, soaked until soft, pitted, diced) to taste
white sugar to taste

Instructions

Step 1

Wash the red dates and raisins, soak them briefly in warm water, then pit and dice.

Mix the glutinous rice flour and wheat starch evenly and sift, then add 100g of water and stir into a thick paste.

Bring 150g of water to a boil in a pot, add the white sugar and dissolve, then pour into the thick paste and stir into a smooth batter. Add the diced red dates, diced raisins, and osmanthus honey, and mix well.

Pour the batter into a container, transfer to a steamer, and steam over high heat for 20 minutes. Remove, let cool, unmold, and cut into squares.
