Carob Frosting Cookies

Carob Frosting Cookies

Ingredients

butter 115 g
carob powder 2 tsp
whole wheat flour 115 g
baking powder 1 tsp
light brown sugar 75 g
rolled oats 50 g
carob chunks (chopped) 50 g
thick cream (for decoration) 3 tbsp
chopped dried apricots (for garnish) 1 tbsp

Instructions

Prepare the oven

Preheat the oven to 190°C (Th. 6). Line the bottom and sides of an 18 cm square pan with baking paper.

Make the batter

Place the butter in a large saucepan and add the carob powder. Heat over low heat, stirring until the mixture is smooth. Add the remaining ingredients.

Baking

Pour the batter into the pan and bake for 20 to 25 minutes, until it starts to firm up. Cut into squares or strips while the cake is still warm. Cool in the pan.

Make the frosting

In a small saucepan, heat the carob (presumably carob chunks or powder) and thick cream over low heat, stirring. Drizzle the syrup over the cookies and sprinkle with chopped dried apricots.
