Instructions
Baking Preparation
Adjust the oven rack to the center position and preheat to 350°F. Line two baking sheets with parchment paper.
Mix the Dry Ingredients
In a medium bowl, whisk together the flour, cornmeal, and oats. Set aside.
Make the Dough
In a stand mixer fitted with the paddle attachment, beat the peanut butter and canola oil until combined. Add the eggs one at a time, beating well after each addition, then beat in the water and vanilla. Reduce the speed to low and add the dry ingredients, mixing until just combined.
Roll and Cut
Turn the dough out onto a work surface and knead once or twice until smooth (it will be a little greasy). Dust the dough and work surface with flour and roll out to 3/16 inch thick. Using a 2½ inch cat-shaped cookie cutter, cut out as many cookies as possible and arrange them on the baking sheets, spacing them 1 inch apart. Sprinkle lightly with wheat germ and gently press into the dough with your hand. Gather the scraps (you may need to knead them a few times to make them stick together), re-roll, and cut out more cookies.
Bake
Bake the cookies one sheet at a time for 18 to 20 minutes, until lightly browned and firm. Transfer the cookies to a wire rack to cool completely.
