Chocolate Filled Butter Cookies

Crisp-outside, soft-inside butter cookies filled with rich chocolate ganache and drizzled with chocolate sauce.

Chocolate Filled Butter Cookies

Ingredients

all-purpose flour 1 cup
salt a pinch
unsalted butter (softened) 1 cup + 1 tbsp (2 + 1 tbsp)
confectioners' sugar (sifted) 1¼cup
eggs 2
egg yolk 1
vanilla extract 1 tsp
dark chocolate (chopped) 8 oz
heavy cream ⅔cup
cherry brandy (optional) 2 tsp
dark chocolate (coarsely chopped (for glaze)) 1 oz
vegetable shortening (for glaze) 1 tsp

Chill Filling

Cover the filling bowl with plastic wrap and chill for 1 hour, or until the filling reaches frosting consistency.

Assemble Sandwich Cookies

Flip half of the cookies upside down. Scoop the chocolate filling into a piping bag fitted with a medium star tip. Pipe a rose-shaped dollop of filling onto the flat side of each upside-down cookie. Top with the remaining cookies and press gently. Arrange the cookies on a cooling rack set on a baking sheet lined with aluminum foil.

Make Chocolate Glaze

Heat the chocolate and shortening in the top of a double boiler over simmering water, stirring occasionally until melted and smooth. Transfer to a small resealable plastic bag, seal the bag. Snip a small hole in one bottom corner of the bag with scissors. Drizzle the chocolate over the cookie tops in a zigzag pattern. Let the chocolate set at room temperature for about 45 minutes.
