Ingredients

dark chocolate (broken into small pieces) 350 g
butter (cut into small pieces, room temperature) 175 g
eggs (separate yolks and whites) 4
granulated sugar 100 g
salt a pinch

Instructions

1

Melt the Chocolate

Break the chocolate into small pieces. Prepare a water bath: heat half a pot of water in a saucepan over high heat until just simmering. Place the chocolate in a bowl, add 1 tbsp of water, set the bowl over the saucepan and melt the chocolate over low heat. Take care not to let the water boil, keep it at a gentle simmer.

2

Make the Egg Yolk Batter

Separate the egg yolks and whites. In a bowl, beat the butter and sugar until creamy. Pour in the melted chocolate and mix until uniform, then add the egg yolks one at a time while continuing to stir.

3

Fold in the Egg Whites

Add salt to the egg whites, and beat with an electric hand mixer until stiff peaks form. Gently fold the whites into the chocolate yolk batter with a spatula to avoid deflating the mixture.

4

Chill and Unmold

Grease a mold, then pour in the creamy mixture. Cover with plastic wrap and refrigerate overnight. Unmold before serving; you can dust with powdered sugar if desired. It has the best flavor when served cold.
