Cilantro Lamb Wontons

Cilantro Lamb Wontons

Ingredients

Wonton wrappers to taste
Ground lamb to taste
Egg white to taste
Minced cilantro to taste
Minced scallion to taste
Minced wood ear mushroom to taste
Minced nori to taste
Minced pickled mustard tuber to taste
Lamb bone broth to taste
Sichuan peppercorn water to taste
Ground white pepper to taste
Soy sauce to taste
Peanut oil to taste
Sesame oil to taste
Fine salt to taste
MSG to taste

Instructions

Prepare the filling

Mix ground lamb with egg white, fine salt, soy sauce, and Sichuan peppercorn water, stirring in one direction until a smooth paste forms. Add minced cilantro, minced scallion, minced wood ear mushroom, peanut oil, sesame oil, and MSG, stirring in the same direction to combine into the filling.

Wrap the wontons

Take a wonton wrapper, place a portion of the prepared filling on it, and wrap it into a raw wonton.

Prepare the soup base

Heat lamb bone broth in a pot until boiling, then add minced pickled mustard tuber, minced cilantro, minced nori, sesame oil, MSG, and ground white pepper to season.

Cook the wontons

Bring a separate pot of fresh water to a rolling boil, add the raw wontons. Use a spatula to stir gently from the bottom in a consistent direction. When the wontons float to the surface and no white foam remains around them, they are fully cooked. Use a slotted spoon to transfer the cooked wontons to a serving bowl, then pour the seasoned broth over them to serve.
