Cold Lotus Root Salad
Lotus root is the underground stem of the lotus plant, rich in vitamin C, dietary fiber, and minerals such as potassium and iron. Wash the fresh lotus root, peel it, and set aside.

Cut into thin slices.

Place in water to remove the starch.

Bring water to a boil in a pot, add a little white vinegar, then add the lotus root slices and blanch for 1 minute. Remove and rinse with cold water.
