king oyster mushrooms 300g
eggs 2
breadcrumbs 1 cup
all-purpose flour 1/2 cup
five-spice powder 1/2 teaspoon
salt 1 teaspoon
vegetable oil for deep frying

Prep the mushrooms

Wipe the mushrooms clean with a damp cloth. Cut into chunky bite-sized pieces, about 1-inch cubes.

Salt and drain

Place mushroom pieces in a bowl and sprinkle with salt. Toss to coat evenly, then let sit for 30 minutes. The salt will draw out excess moisture. Squeeze out any liquid before cooking.

Place flour in one dish, beaten eggs in another, and breadcrumbs mixed with five-spice powder in a third. Work station style for easy coating.
