Lemon Glazed Donuts

Story

These soft donuts get their sunny personality from fresh lemon juice and zest. The glaze sets to a beautiful glossy finish that cracks satisfyingly when you bite in.

Ingredients

all-purpose flour 2 cups
granulated sugar 3/4 cup
eggs 2 large
butter, melted 1/2 cup
fresh lemon juice 1/4 cup
lemon zest 1 tablespoon
baking powder 2 teaspoons
milk 1/2 cup
powdered sugar for glaze 2 cups
vegetable oil for frying 4 cups

Instructions

1

Mix dry ingredients

Whisk together flour, baking powder, and a pinch of salt in a large bowl. Set aside.

2

Combine wet ingredients

In another bowl, beat eggs with sugar until light and fluffy. Stir in melted butter, lemon juice, lemon zest, and milk until well combined.

3

Form the batter

Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Don't overmix—a few small lumps are totally fine.

4

Shape and fry

Heat oil to 350°F (175°C). Pipe or spoon donut shapes into the oil using a piping bag or zip-top bag with corner cut off. Fry each donut for 2-3 minutes per side until golden brown. Remove and drain on paper towels.

5

Glaze and serve

Whisk powdered sugar with 2-3 tablespoons of lemon juice until smooth. Dip warm donuts in the glaze, place on a wire rack, and let the glaze set for 5 minutes before serving.
