Crispy Pork Flaky Biscuits
Most modern Chinese dim sum is overloaded with sweetness, with just one bite often leaving an overly cloying taste that ruins your appetite. On days off when I have free time, I make this classic Chinese baked shaobing, adding juicy fresh pork for a rich, savory umami flavor alongside its signature crisp crust. This batch uses newly packaged Jinlongyu Australian medium-wheat flour: 100% imported from Australia, a winner of the World Quality Competition, with fine, smooth texture, natural soft color, and excellent chew that makes it perfectly suited for baking flaky shaobing, and a top pick for high-quality homemade flour-based foods.

Step 2
Add scallion water to the ground pork.
Step 3
Add 20g minced ginger, 15g cooking wine (or rice wine), 15g sesame oil, 15g soy sauce, 20g pepper, 15g sugar, and salt to taste.

Stir in one direction until evenly mixed. Cover with plastic wrap and place in the freezer for 30 minutes.
Step 5
Separately prepare the water dough (340g flour + 120g lard or butter + 150ml water) and the oil dough (280g flour + 150g lard or butter). Place each in a stand mixer and knead until smooth doughs of similar softness are formed.
Step 6
Cover both doughs with a damp cloth and let rest for 20 minutes. Divide each into 17 equal portions and roll into balls.
Step 7
Wrap the oil dough with the water dough and form into small balls.
Step 8
After wrapping, place the seam side up.
Step 9
Flatten the balls and roll them out into an oval (tongue) shape.
Step 10
Roll up into a long strip.
Step 11
Flatten the strips, form into balls, roll out into round discs, and wrap with the pork filling. Pinch to seal into a ball.

Place seam side down and gently flatten. Sprinkle with white sesame seeds.
Step 13
Place the prepared pork biscuits on a baking tray in order. Bake in the oven with both top and bottom heat at 180°C for 30 minutes, then switch to top heat only and bake for 5-10 minutes until golden.
