Crispy Savory Sauce Pancake

Make the dough a bit softer for the best texture and flavor. If it sticks, lightly oil the work surface. The finished savory sauce is also great tossed with noodles or glass noodles.

Crispy Savory Sauce Pancake

Ingredients

flour as needed
boiling water as needed:
garlic cloves 10
broad bean paste to taste
sweet bean sauce to taste
chili sauce a small amount
sugar a small amount
cumin powder to taste
white sesame seeds to taste
star anise 1
Sichuan peppercorns to taste

Instructions

1

Step 1

Mix flour as needed with boiling water, stirring until it forms flaky clumps.

2

Step 2

Knead into a smooth dough. Let it rest for 20 minutes.

3

Step 3

Prepare the savory sauce: Pour an appropriate amount of oil into a pot, turn to low heat, add star anise and Sichuan peppercorns, and stir-fry until fragrant.

4

Step 4

Discard the Sichuan peppercorns and star anise, add the minced garlic, and stir-fry over low heat until fragrant.

5

Step 5

Add broad bean paste and stir-fry.

6

Step 6

Add sweet bean sauce and continue stir-frying.

7

Step 7

Add a little chili sauce (the chili sauce used is very spicy, so only a small amount is added)

8

Step 8

Continue adding a small amount of sugar and cumin powder, and stir-fry until well combined.

9

Step 9

Add white sesame seeds.

10

Step 10

Add a small amount of water, turn to high heat, and stir continuously.

11

Step 11

Stir-fry until all the water has evaporated. I added too much oil, so I poured out some excess oil and brushed it onto the dough sheet.

12

Step 12

Take one-third of the dough, roll it into a rectangle, and brush with oil.

13

Step 13

Roll it up from bottom to top.

14

Step 14

Roll it into a long strip.

15

Step 15

Flip the long strip over, then fold the right one-third of the strip to the left.

16

Step 16

Fold the left one-third over to the right and press down, just like folding a quilt.

17

Step 17

Press the dough flat with your hands.

18

Step 18

Use a rolling pin to roll it into a rectangle (the length should not exceed the size of your electric griddle)

19

Step 19

Brush a thin layer of oil on the electric griddle and preheat it, place the pancake inside, and pan-fry over low heat. Be sure to keep the lid covered.

20

Step 20

Pan-fry until both sides are lightly golden. (I used high heat at the end, so when using high heat, be sure to flip the pancake frequently to avoid burning.)

21

Step 21

Transfer to a serving bowl.

22

Step 22

Spread the prepared sauce on top.

23

Step 23

Sprinkle with chopped scallions.

24

Step 24

Cut into pieces and serve.
