Daisy Cookies
These Victorian daisy biscuits are filled with orange jam, topped with meringue, and have a romantic, old-fashioned appearance.
Ingredients
all-purpose flour
3 cups
salt
1/2 teaspoon
ground cinnamon
1/4 teaspoon
ground nutmeg or mace
1/4 teaspoon
unsalted butter (slightly softened)
1 cup (2 sticks)
granulated sugar
1 cup
egg yolks (room temperature)
3 large
finely grated lemon zest
1/2 teaspoon
meringue glaze (recipe follows)
to taste
orange or apricot marmalade

Preheat and Mix the Dry Ingredients
Preheat the oven to 375°F. Grease or spray several baking sheets with nonstick spray. In a large bowl, thoroughly whisk together the flour, salt, cinnamon, and nutmeg or mace; set aside.

Cream the Butter
In another large bowl, using an electric mixer on medium speed, beat the butter and sugar until light and well combined.

Process the Egg Yolks
In another bowl, using an electric mixer on high speed, beat the egg yolks with 3 tablespoons of warm water until pale and thickened, 2 to 3 minutes.

Combine the Dough
Beat the yolk mixture and lemon zest into the butter mixture until smooth and well combined. Gradually beat or fold in the flour mixture until evenly distributed.
