Instructions
Cream the butter
Place the butter in a bowl, and beat with an electric mixer on high speed until it forms a smooth, creamy consistency.
Add the caster sugar
Add the caster sugar to the mixture from step 1, and continue mixing until the mixture turns pale white.
Add the eggs
Beat the eggs, then add them to the mixture from step 2 in 3 to 4 portions, mixing thoroughly with an electric mixer after each addition.
Add half of the dry mix
Add half of dry mix A to the mixture from step 3, and stir with a rubber spatula until only a few small lumps remain.
Add the milk
Add the milk to the mixture from step 4, and stir with a rubber spatula until fully combined.
Add the remaining dry mix
Add the remaining half of dry mix A to the mixture from step 5, and stir with a rubber spatula until no lumps remain.
Bake
Scoop the dough from step 6 evenly into prepared muffin molds, smoothing the tops. Place the molds in an oven preheated to 180°C and bake for approximately 20 minutes.
Make the colored cream
Divide the heavy cream into 3 equal portions, placing each in a separate bowl. Add 1 tsp of fine sugar to each bowl, then add water-soluble food coloring to one bowl and matcha powder to another. Set each bowl over an ice water bath, and whip with a whisk until the cream is about 80% whipped.
Decorate
Remove the baked cake from the mold, and place it on a cake cooling rack to cool completely. Transfer the cream from step 8 into a piping bag fitted with a metal tip, pipe your desired patterns on the surface of the muffin. Top with silver dragées and other decorative candies as desired.
