Ingredients

banana leaf (cut into 8-inch rounds) 1
cooked salted duck egg (cut lengthwise into 6 slices, optional) ½
baking mix (such as Bisquick or Krusteaz) 1 cup
milk 1 cup
egg 1
sugar (plus a pinch more for topping) ¾ cup
feta cheese or other soft white cheese (cut into thin 1x2 inch slices) 2 oz
unsalted butter (melted) 1 tbsp

Instructions

1

Preheat the oven

Preheat the oven to 325°F.

2

Prepare the pan

Line the bottom of an 8-inch round baking pan with a round of parchment paper, then lay the banana leaf on top. Arrange the salted duck egg slices like petals in the center of the pan, with the pointed tips meeting in the middle.

3

Mix the batter

In a medium mixing bowl, whisk together the baking mix, milk, egg, and sugar until most of the lumps are smooth. Immediately pour the batter into the baking pan and bake for 20 minutes.

4

Add toppings and continue baking

Remove the cake and evenly spread the cheese over the half-baked cake. Make sure every bite has cheese. Continue baking for 20 minutes until the surface is a beautiful golden brown. Brush the surface with the melted butter and sprinkle with sugar.
