This hearty dish combines the rich umami of rehydrated mushrooms with the warming kick of five-spice powder. It's a classic comfort food that pairs perfectly with a bowl of steamed rice.

Ingredients

Pork ribs 500g
Dried shiitake mushrooms 6-8 pieces
Garlic cloves 4 large
Five-spice powder 1 tsp
Light soy sauce 2 tbsp
Dark soy sauce 1 tbsp
Rock sugar 1 small piece
Cooking wine 2 tbsp
Water 1 cup
Vegetable oil 2 tbsp

Prep the ingredients

Soak the dried mushrooms in warm water until they are soft and pliable, then remove the stems. Peel the garlic cloves and slice them into thick chunks.

Marinate the ribs

Season the ribs with salt, light soy sauce, dark soy sauce, and sugar. Mix well to coat and let them sit for about 10 minutes to absorb the flavors.

Sear the meat

Heat oil in a wok or deep pan over medium heat. Add the garlic chunks and fry until fragrant. Toss in the marinated ribs and stir-fry until the meat is browned on the outside.

Deglaze and braise

Pour in the cooking wine, cover the pan briefly for a few seconds to let the meat absorb the aroma, then add the mushrooms, five-spice powder, and water. Bring everything to a boil.

Simmer until tender

Lower the heat, cover, and simmer for 30 to 40 minutes. Stir occasionally and add a splash of water if the pot gets too dry. Cook until the sauce thickens and the ribs are tender enough to fall off the bone.
