Prepare the green beans
Select green beans that are relatively straight and similar in length. Trim off any tough ends and wash thoroughly under cold water.
Blanch until tender-crisp
Bring a pot of well-salted water to a gentle boil. Add the green beans and cook for about 5-6 minutes until they turn bright green and are tender but still have a slight snap. Avoid overcooking.
Cool and shape
Immediately transfer the beans to an ice bath to stop the cooking process. Once completely cooled, remove and pat dry. Starting from one end, carefully spiral the bean around itself to create a rolled coil shape.
Skewer the rolls
Gently insert a bamboo skewer through the center of each rolled green bean, pushing through from top to bottom to secure the spiral shape.
Make the garlic dressing
In a small bowl, combine the minced garlic, white vinegar, sesame oil, salt, and sugar. Whisk until the sugar and salt dissolve completely.
