This simple but flavorful dish combines tender lettuce with a punchy garlic-vinegar dressing and crunchy peanuts for texture. The key is to briefly blanch the lettuce to retain its crisp-tender bite, then toss it while still warm so it absorbs the sauce beautifully.

Ingredients

lettuce (romaine or butter lettuce) 300g, washed and cut into 2-inch pieces
cooked peanuts 30g, roughly crushed
garlic 3 cloves, finely minced
rice vinegar 1.5 tablespoons
oyster sauce 1 tablespoon
salt 1/2 teaspoon
sesame oil 1 teaspoon
vegetable oil 1 tablespoon (for blanching)

Instructions

Blanch the lettuce

Bring a pot of water to a boil. Add the lettuce pieces and cook for about 30 seconds until slightly softened but still bright green. Drain immediately and let cool slightly.

Make the dressing

In a small bowl, combine minced garlic, rice vinegar, oyster sauce, salt, and sesame oil. Stir until well mixed.

Place the warm lettuce on a serving plate. Drizzle the dressing over the top, then sprinkle with crushed peanuts. Toss gently and serve immediately.
