Green Tea Cake Base

Green Tea Cake Base

Ingredients

Green tea powder 10 g
Water 45 g
Egg yolks 50 g
Powdered sugar (sifted) 50 g
Granulated sugar 65 g
Egg whites 138 g
Cream of tartar 2 g
Cake flour (sifted) 50 g
Cornstarch (sifted) 10 g
Liquid shortening 25 g

Instructions

Step 1

Place the green tea powder and water in a bowl, heat and stir to 80°C, then cool to 40°C and set aside.

Place the egg yolks and sifted powdered sugar in a bowl, and beat until pale white.

Pour the mixture from Step 1 into Step 2 and mix well.

Place the egg whites, granulated sugar, and cream of tartar in a bowl, and beat with an electric mixer to medium-stiff peaks.

Add the meringue from Step 4 into the Step 3 mixture in batches while folding, then gradually fold in the sifted cake flour and cornstarch until just combined.

Take a small portion of the batter from Step 5 and mix it with the liquid shortening, then pour it back into the remaining batter and fold until evenly combined.

Pour the batter from Step 6 onto a parchment-lined baking tray and spread it into an even layer.

Bake in the oven at 160°C for about 20 minutes, then remove from the oven, invert onto a cooling rack, and peel off the baking tray and parchment paper.
