Homemade Breakfast Twisted Dough Sticks
Mahua is a classic Chinese deep-fried dough snack made from quality flour, eggs, sugar, and cooking oil. Crisp yet not hard, fragrant yet not greasy, with no additives added, the golden twists release an inviting aroma and a long-lasting, satisfying flavor.

Add sugar and yeast to the warm water and let dissolve.

Beat 2 eggs until well mixed.

Pour in the liquid and beaten eggs, add cooking oil, and stir until it forms a flaky texture.

Knead into a dough, cover with film, and let rest for 15 minutes (rises faster in summer).

Divide the risen dough into 8 equal portions.

Roll into strips and brush with cooking oil (to prevent drying).

Take one portion and roll it into an even strip.

Twist by rolling in opposite directions with both hands, then bring the two ends together and twist again to form a twisted dough stick shape.

In hot summer weather, let rise a second time for 20–30 minutes until the twisted dough sticks become plump.

Add an appropriate amount of cooking oil to the pan. When the oil reaches 40–50% hot, add the raw twisted dough sticks and fry.

Be sure to fry on low heat, otherwise the outside will burn while the inside is still raw. Properly proofed raw dough will float on the oil surface.

Slowly fry until golden brown—the color is beautiful! Crispy outside, soft inside.
