Ingredients
Instructions
Step 1
Prepare one piece of scallion white, two slices of ginger, and about 50 g of pork cut into small dice.
Step 2
Heat oil in a pan and sauté the ginger slices and minced scallion white until fragrant, then slide in the diced pork.
Step 3
Stir-fry the pork quickly, add a small splash of light soy sauce, a touch of dark soy sauce, and a pinch of salt, and cook until the pork turns a reddish-brown color.
Step 4
Pour boiling water into the pan and let the pork simmer briefly. Meanwhile, prepare half a potato cut into thin long strips and a small amount of frozen tofu diced (regular firm tofu works just as well).
Step 5
Add the potato and tofu to the broth and simmer together for 15 minutes, until the potato is soft and falling apart. Here comes the secret: stir in one heaping tablespoon of leftover rice or millet porridge (I used some millet porridge from yesterday), which greatly enhances the aroma and body of the soup.
Step 6
Once the potato strips begin to soften and melt slightly, add a splash of vinegar. Those who love a tangier flavor can add more—it tastes wonderfully zingy. At this point the whole kitchen will be filled with fragrance!
Step 7
Add the hand-rolled or store-bought fresh noodles and cook according to their thickness—generally about 5–6 minutes on high heat will be enough. Taste the broth for seasoning; add a little salt if it is too mild. The goal is to balance the flavors to your liking.
Step 8
Prepare a small amount of cilantro, scallion, and green pepper. When the noodles are nearly done, add the green pepper first and cook for one minute until just tender. Finally stir in the cilantro and scallion and remove from heat.
Step 9
The noodles are silky and springy, the frozen tofu soaks up all the meaty juices, and the rich fragrance of potato combined with millet weaves together into a delicious bowl of homestyle noodles. For the finishing touch, drizzle in some chili oil for extra aroma. Enjoy!
