Hot and Sour Cold Noodles

Ingredients

noodles 500g
cooked lean pork (cut into thin strips) 150g
cucumber (cut into thin strips) 100g
mung bean sprouts (trim ends, wash, blanch, and cool) 50g
egg (beaten, with salt, made into thin omelet, cut into thin strips) 1
soy sauce 10g
aromatic vinegar 15g
fine salt 3g
MSG 2g
sesame oil 10g
stock to taste
cooked soybean oil a little
chili oil a little

Prepare ingredients

Cut the cooked lean pork and cucumber into thin strips. Trim the ends of the mung bean sprouts, wash, blanch, and let cool. Beat the egg with a pinch of fine salt, and use a spatula to make a thin omelet; cut into thin strips and set aside.

Make the dressing

Combine soy sauce, aromatic vinegar, fine salt, MSG, sesame oil, and stock in a bowl; whisk into a dressing.

Plate and serve

Arrange cucumber, mung bean sprouts, egg, and cooked pork strips in sequence over the noodles. Drizzle with chili oil. Serve with the dressing on the side and toss together before eating.
