This dish gets better with time. The four-hour marinating period allows the cabbage to soften slightly while soaking up all the aromatic flavors from the seasoned oil.

Ingredients

Napa cabbage 1 medium head, core removed and sliced into thin strips
Green onions 3 stalks, finely chopped
Fresh ginger 1 inch, minced
Garlic 2 cloves, minced
Dried red chili flakes 1 tablespoon (adjust to taste)
Soy sauce 3 tablespoons
Rice vinegar 4 tablespoons
Sugar 2 teaspoons
Salt 1 teaspoon
White pepper 1/2 teaspoon
Sichuan peppercorns 1/4 teaspoon
Chicken powder 1/2 teaspoon (optional)
Vegetable oil 1/3 cup

Prepare the vegetables

Cut the napa cabbage into thin, bite-sized strips. Separate the core and discard or reserve for another use. Finely chop the green onions, ginger, and garlic. Gather them in a large heatproof bowl.

Season the aromatics

Add the dried chili flakes to the bowl with the green onions, ginger, and garlic. Pour in the soy sauce, rice vinegar, and sugar. Sprinkle in the salt, white pepper, Sichuan peppercorns, and chicken powder if using. Mix everything together until the sugar dissolves.

Bloom the flavors

Heat the vegetable oil in a small pan until it shimmers and becomes very hot. Carefully pour the sizzling oil directly over the aromatics in the bowl. The heat will release the fragrances of the ginger, garlic, and chili. Let the mixture sit for about 10 minutes to cool slightly.

Combine and marinate

Add the sliced cabbage to the bowl. Toss thoroughly until every strand is coated with the seasoned oil and sauce. Cover and refrigerate for at least 4 hours, stirring occasionally if possible, to allow the flavors to meld.

Serve

Taste and adjust seasoning if needed. Transfer to a serving dish and enjoy cold or at room temperature as a refreshing appetizer or side dish.
