Jiangxi Mixed Rice Noodles

Jiangxi rice noodles As needed
Green and red chili peppers 1 of each
Minced garlic A pinch

Place the rice noodles in a pot of cold water, turn on the heat, and cover to bring to a boil.

While the noodles are cooking, prepare the seasoning: get the minced garlic and one green and one red chili pepper ready.

Put the green and red chili peppers and minced garlic into a food processor and blend them up.

Blend until it reaches this consistency.

Heat some oil in a pan, pour in the blended chili and garlic, stir-fry until fragrant, then transfer to a bowl.

Add soy sauce, oyster sauce, salt, and chicken essence to the bowl, then mix in a spoonful of dark soy sauce.

Once the water with the noodles comes to a boil, turn off the heat. Do not lift the lid; let it steam for about ten minutes until the noodles soften. Then drain the noodles in a colander and rinse off the excess starch.

Place the noodles in a stainless steel bowl, pour the prepared sauce over them, add a little chopped scallion, and top with pickled long beans and peanuts.
