Marquis Cookies
Cat tongue cookies layered with ganache and praline, finished with a chocolate coating.
Ingredients
Cat tongue cookies (see recipe above)
to taste
Ganache (see page 239)
3 parts
Praline paste (crushed nougat, see page 257)
1 part
Chocolate (for decoration)
to taste
Instructions

Make the filling
Mix 3 parts ganache with 1 part crushed nougat or praline paste.

Assemble
Take two cat tongue cookies and sandwich the filling between them.

Decorate
Write "Marquis" on the top cookie with chocolate, or dip both ends in tempered chocolate to coat.
