Napa Cabbage and King Oyster Mushroom Egg Dumplings
As the old saying goes, nothing beats a satisfying plate of dumplings. Northeasterners are huge fans of dumplings, and my family eats them regularly, almost once a week. Today we’re preparing cabbage dumplings. Actually, making dumplings is super convenient: you just mix a variety of ingredients together for a perfect blend of flavors that never gets old. Plus, dumplings make a complete meal on their own, so we rarely cook extra side dishes when we have dumplings at home—aren’t they even more low-effort than preparing a full spread of stir-fries?

Instructions
Step 1
Add an appropriate amount of water to the bread flour and knead into a dough. Cover with plastic wrap and let it rest.
Step 2
Prepare the filling: Soak the Napa cabbage in lightly salted water for 10 minutes, rinse it thoroughly, and wash the king oyster mushroom.
Step 3
Finely chop the Napa cabbage, sprinkle with some salt, and let it marinate for about 5 minutes.
Step 4
Add an appropriate amount of oil to the wok — slightly more than usual so you won't need to add more when mixing the filling. Beat the eggs, then pour them into the hot oil and quickly scramble them with chopsticks; the finer the better.
Step 5
Finely chop the king oyster mushroom and the ham sausage. Squeeze out the excess water from the cabbage. Have all the ingredients ready.
Step 6
Take a large bowl, add all the ingredients, and finely chop the scallion.
Step 7
Add salt, five-spice powder, and mushroom powder, and mix well. If it seems dry, add a little more oil and mix evenly.
Step 8
Wrap the dumplings: By now the dough has rested. Roll it into a long rope, evenly cut into small dough portions, roll each into thin wrappers, place some filling on each, and pinch the edges together with both hands to form dumplings. Wrapping dumplings is actually quite simple.
Step 9
Add an appropriate amount of water to a pot. Once the water boils, add the dumplings. When it returns to a boil, add some cold water. Repeat once more. On the third boil, the dumplings are ready — cooked just right.
Step 10
Remove from the pot and plate.
