No-Bake Orange Cheesecake

Ingredients

Chocolate sablé dough (baked, 1/8 inch thick) 17-inch round slices
Orange marmalade 1-1.33 oz (30-40 g)
Chocolate génoise sponge cake (1/4 inch thick) 17-inch round slices
Sweet syrup (flavored with orange liqueur) to taste
Orange-flavored cheese mousse (see recipe above) 1 lb (450-500 g)
Chantilly cream to taste
Kumquat preserves to taste
Marbled chocolate shards to taste

Instructions

1

Step 1

Spread the orange marmalade over the chocolate sablé rounds. Top with the sponge cake rounds and brush the sponge with syrup.

2

Step 2

Place the sponge and sablé base into a 7-inch (18 cm) Charlotte ring set on a cake board. Fill with the mousse and smooth the surface with a spatula. Refrigerate until set.

3

Step 3

Remove the mold ring; use a kitchen torch to gently warm the ring for easier unmolding.

4

Step 4

Using a piping bag fitted with a star tip or Saint-Honoré tip, decorate the edge of the cake with Chantilly cream as desired. Fill the center with kumquat preserves.

5

Step 5

Break the chocolate shards into irregular pieces and use them to cover the sides of the cake.
