Story

This dish highlights the natural sweetness of cold-water shrimp. The 'jiaoma' (numbing pepper) dressing adds a tingly, aromatic kick that pairs perfectly with the delicate seafood.

Ingredients

Canadian Arctic shrimp (cooked, thawed) 300g
Fresh scallions 3 stalks
Sichuan peppercorns 1 tsp
Light soy sauce 1 tbsp
Toasted sesame oil 1 tbsp
Sea salt 1/2 tsp

Instructions

1

Prepare the aromatics

Finely chop the scallions. Toast the Sichuan peppercorns in a dry pan until fragrant, then crush them into a fine powder.

2

Mix the dressing

In a small bowl, combine the crushed peppercorns, chopped scallions, soy sauce, sesame oil, and salt. Whisk until well blended.

3

Toss and serve

Place the thawed shrimp in a mixing bowl. Pour the dressing over the shrimp and toss gently to coat evenly. Serve chilled.
