Shaved Radish Salad with Savory Dressing

This simple salad makes a wonderful make-ahead side dish. The radish strips can be prepared in advance and dressed just before serving to keep them crisp.

Ingredients

daikon radish 300g
salt 1 teaspoon
light soy sauce 2 tablespoons
rice vinegar 1 tablespoon
sesame oil 1 teaspoon
granulated sugar 1/2 teaspoon
garlic, minced 1 clove
sesame seeds, toasted for garnish

Prepare the radish

Peel the daikon and cut it into very thin matchstick-sized strips. A mandoline slicer works wonderfully here, or you can carefully slice by hand.

Draw out moisture

Toss the shredded radish with the salt in a bowl. Let it sit for about 10 minutes—you'll see liquid start to collect at the bottom. This step removes any bitter edge and softens the texture slightly.

Rinse and dry

Drain the liquid, then give the radish a quick rinse with cold water. Squeeze out excess moisture with your hands or pat dry with clean kitchen towels.

Make the dressing and combine

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and minced garlic until the sugar dissolves. Pour this over the radish strips and toss thoroughly to coat evenly.

Finish and serve

Transfer to a serving dish and sprinkle toasted sesame seeds on top. Serve immediately for the best crunch, or refrigerate for 30 minutes to let flavors meld.
