Pan-Fried Lemon Cod with Fruit and Vegetable Salad

My little girl has loved fish soup noodles ever since she started eating solid food, so I used to make them for her every 3 to 5 days. When she grew tired of the same routine, I wanted to try making her low-bone sea fish instead. I ordered Alaska pollock fillets with Antarctic Direct next-day delivery, placed the order one evening and they arrived early the next morning still fully frozen—modern logistics really are so convenient.

Native to Alaska, pollock live in cold waters ranging from 0°C to 16°C. Their snow-white flesh is tender, mild with no fishy off-flavor, and packs more protein than hairtail, salmon, or pomfret, while being lower in fat than salmon and hairtail. It’s an excellent pick for both toddlers with developed chewing ability and older adults.

This pan-seared lemon cod, served with a side of fresh fruit and vegetable salad, is incredibly tender. My daughter couldn’t wait to dig in straight out of the pan. As soon as I finished cooking, she finished off the extra pieces in the skillet before I could even plate my own serving for photos, waiting patiently for me to snap pictures before asking for more—she’s such a little foodie.

Pan-Fried Lemon Cod with Fruit and Vegetable Salad

Ingredients

cod 200 g
lemon 1
carrot 0.5
snow peas to taste
red cherry tomatoes 5
salt a pinch
olive oil to taste
yellow cherry tomatoes 5

Instructions

Step 1

Prepare all ingredients, take the Antarctic cod strips out of the freezer to thaw in advance.

Wash the red and yellow cherry tomatoes, cut them in half, wash the carrot, peel it and slice it.

Rub the lemon with salt to clean its skin, slice half of it and set aside, squeeze juice from the remaining half later.

Wash the Antarctic cod strips, pat dry with kitchen paper, cut into strips, add a pinch of salt, squeeze in a little lemon juice, cover with several lemon slices and marinate for at least 10 minutes.

Pick and wash the snow peas, blanch them in boiling water, blanch the carrot until cooked, remove and rinse with cold water, add a pinch of salt, appropriate amount of olive oil, mix well and set aside.

Heat a frying pan, add a little olive oil, put in the Antarctic cod strips and fry over low heat.

Flip to fry the other side once one side is set, add the marinating lemon slices when the cod releases water during frying, which will make the cod more tender and odorless.

Arrange the cooked cod on a plate, add the cut cherry tomatoes and lemon slices, add the mixed snow peas and carrot, and get ready to eat!
