Step 1

This is homemade cranberry toast, extremely soft, and it stays soft for up to 3 days. One batch lasts for 2 to 3 days, so you don't have to wake up early to make breakfast, and you can enjoy it in various ways. If you can't make it yourself, just buy pre-made toast, it's affordable at around 7 yuan per loaf, and one loaf lasts for 2 days as well.

Use 2 large eggs. It's best to pick red-fleshed dragon fruit, as its vibrant color is very appetizing.

Take a slice of toast, trim off the four edges, then cut one horizontal and one vertical slit in the middle to split it into 4 pieces, and pair them into 2 groups. Beat the eggs and mix thoroughly. Peel the dragon fruit, slice it, and cut the slices into small cubes slightly smaller than the toast surface for easier operation.

Place a slice of dragon fruit on a piece of toast, then cover it with another slice of toast, and press lightly to compact.

Dip the toast pieces into the egg mixture, making sure all cut surfaces are fully coated with egg liquid. That's why you need to choose larger eggs, otherwise you won't have enough egg mixture.

Lightly brush a thin layer of oil in the pan; a flat-bottomed pan is recommended. I'm lazy so I just used a regular wok, but mine is non-stick so it works just as well. Arrange the egg-coated toast slices in the pan and fry over medium-low heat.

Fry one side until done, then flip to fry the other side. After that, fry all the cut edges as well. The golden exterior surrounds a soft purple interior, it looks so appetizing, doesn't it?

Take the toast out of the pan, cut it and arrange on a plate. It looks delicious, and the plate will be cleared in no time once it's served. It's great for both breakfast and snacks.
