Peanut Butter Chocolate Kisses

Ingredients

all-purpose flour 1⅔ cups
baking soda 1 teaspoon
salt ½ teaspoon
unsalted butter (softened) 8 tablespoons (1 stick)
creamy peanut butter ¾ cup
dark brown sugar (lightly packed) 1 cup
large egg 1
pure vanilla extract 1 teaspoon
granulated sugar (for coating the balls) About ⅓ cup
Hershey's Kisses (unwrapped) About 48

Instructions

1

Preheat oven

Preheat the oven to 375°F. Line 2 cookie sheets with parchment paper.

2

Mix dry ingredients

Whisk together the flour, baking soda, and salt in a medium bowl.

3

Mix dough

Using an electric mixer, beat the butter in a large bowl until creamy. Beat in the peanut butter, then the brown sugar. Add the egg and vanilla and beat until blended. With the beaters on low speed, mix in the flour mixture until fully combined.

4

Shape and coat

Place the granulated sugar in a medium bowl. Roll the dough into 1-inch balls, and then roll each ball in sugar to coat completely. Place the balls on the prepared sheets, arranging them about 1½ inches apart.

5

Bake and assemble

Bake for 10 minutes, rotating the sheets from top to bottom and front to back about halfway through baking, or until the cookies are puffed and cracked on top. Remove the sheets from the oven and immediately press a chocolate kiss into the center of each hot cookie. Transfer the cookies to a rack to cool completely.
